Davide Giacomelli Brings a Fresh Culinary Vision to Phulay Bay

The acclaimed Italian chef brings a fresh culinary vision to the Krabi luxury resort, celebrating Southern Thailand’s seasonal ingredients and regional traditions

Phulay Bay, a Ritz-Carlton Reserve in Thailand’s Krabi province, has appointed Davide Giacomelli as Executive Chef, marking a new chapter for the resort’s gastronomic offering.

With a career spanning some of the world’s most prestigious kitchens, including three-MICHELIN-Starred Restaurant Le Meurice Alain Ducasse in Paris and Four Seasons Hotel Lion Palace in St Petersburg, Giacomelli brings international expertise to the shores of the Andaman Sea. His Italian restaurant concept, LUCE by Davide Giacomelli, was named a Global Winner at the 2023 World Luxury Restaurant Awards.

At Phulay Bay, home to six restaurants and bars, his approach will centre on the flavours of Southern Thailand, with locally sourced, seasonal ingredients including fresh seafood, tropical fruits, aromatic herbs and premium Thai rice. At Lae Lay, the resort’s intimate fine-dining restaurant overlooking the sea, Giacomelli will introduce evolving menus that combine refined international techniques with the culinary heritage of Krabi.

“I want to explore the connection between the land and the sea, local ingredients and Southern Thai traditions, with the precision and techniques I have learned throughout my journey,” says Giacomelli.

To celebrate his appointment, Phulay Bay will host a special culinary collaboration on 20 November 2026, bringing Giacomelli together with Arnaud Dunand Sauthier, Chef-Patron of Bangkok’s MICHELIN-Starred Maison Dunand. Their six-course, four-hands dinner will unite modern Alpine cuisine with the flavours of the Andaman coast. The experience is priced at THB 5,600++ per person, with an optional wine pairing for THB 2,500++.
