Kuoco Madrid: A Bold Fusion of Flavour in Chueca

Tucked away in the heart of Madrid’s Chueca, Kuoco delivers fusion dining at its most adventurous, with Venezuelan roots adding an extra layer of spice and personality. While the one of a kind restaurant is relaxed in atmosphere, it certainly delivers on the plate.
At the helm are young Venezuelans Rafa Bergamo and Andrés Correa, whose approach is driven by curiosity. The menu draws inspiration from around the world, combining contrasting ingredients, techniques and flavours. Kuoco takes its name from cuoco, the Italian word for “cook”, and this is most definitely a restaurant where the cooking takes centre stage.
The à la carte menu is compact but varied, while the Attraverso tasting menu offers a deeper exploration of the kitchen’s creativity.
Gunkan Croquette
One of the standout dishes is the Gunkan Croquette, an inventive take on a classic Spanish favourite. Smoked chipotle, wagyu jerky, cured egg yolk and black tobiko come together in an intensely savoury bite that neatly captures Kuoco’s approach: familiar tastes mixed with global influences. The al pastor pork fried wontons with pineapple and chilli are another highlight, balancing richness and sweetness, while the ceviche brings fresh flavours to the table.
Other signatures include the Peking duck, oxtail and mushroom croquettes and robata-grilled seabass. Seafood features particularly strongly, but meat dishes are given equal attention, with tasty marinades, smoke, and plenty of spice.
Madrid has no shortage of elaborate tasting menus, but Kuoco delivers dashings of creativity and technical skill while maintaining a relaxed and welcoming atmosphere. The excellent service adds to the experience - Daniel and his team are warm, knowledgeable and attentive, guiding diners through the menu with genuine enthusiasm.
Kuoco is a restaurant for diners who like their food bold, playful and full of surprises. It may take inspiration from all over the world, but the combination of technique, spice and Venezuelan character gives it a strong identity, and worthy of a visit the next time you are in the city.
